How to Cater to Everyone’s Pallets

When catering an event, the host’s primary goal is to make sure that all the guest’s needs are met. There is nothing worse for a guest than leaving a well catered party hungry because the food did not live up to their expectations. While Executive Cuisine offers a variety of delicious options, we also understand that not everyone can eat the same food. That is why we pride ourselves on a diversified menu for in-flight catering and on the ground. When choosing your entrees for a holiday, corporate, wedding, or other type of event you want to consider the different pallets of all your guests. Here are a few menu options we recommend for allergies, vegans/vegetarians, and particular eaters.
Deciding on a menu option for someone with fish allergies is easy! Seafood only accounts for a section of our menu. Here are some other delicious entrees to consider:
• Amazon Fried Chicken Breast with Cilantro Sauce
• Black Angus Beef Tenderloin with Wild Mushroom Madeira Sauce
• Grilled Skirt Steak with Warm Radish & Red Onion Pickle
• Baby Spinach with Roasted Beets and Toasted Pecans with a Mandarin Orange Vinaigrette
If you love your meats, it may be difficult to imagine what a vegan or vegetarian might consider appetizing. Our culinary experts at Executive Cuisine have put together a fine assortment of animal-free dinners that will delight your plant-based friends or family.
For Vegans:
• Grilled Portobello Mushrooms with Garlicky Spinach & Sun-Dried Tomatoes
• West African Vegetable Stew with Saffron Couscous
• Curry Roasted Cauliflower with Almonds & Raisins
• Roasted Summer Vegetables with Herbs de Provence
• Quinoa Pilaf with Black Beans & Corn
For Vegetarians

• Artichoke and Mushroom Risotto with Asiago and Sun-Dried Tomatoes
• Nori Wrapped Salmon & Vegetable Bundle with Sweet Soy
Some people do not have any dietary restrictions but have very particular pallets. These guests can be a bit tricky to find something that will please them, but our chefs will surely find a way to make them happy. You may want to ask your particular eater what types of meals they typically enjoy. If this is not an option, consider more basic food items that do not have complex tastes or textures. Here are a few menu options we recommend for someone who enjoys the simple foods in life:
• Traditional Coq Au Vin
• Shepherd’s Pie or Classic Beef Pot Pies
• Assorted Pastas with Marina Sauce – Penne, Spaghetti, Fettuccine, Tagliatelle, Angel Hair, Farfalle, etc.
• Baby Vegetables with Herb Butter
• Roasted Red Potatoes with Garlic and Fennel or Lemon and Fresh Herbs
Of course, these are only a few suggestions to get your party planning started. Executive Cuisine has a large menu to accommodate all your guests. If you’re not sure what food items will work best, contact us today and we will be happy to assist with questions or custom orders.
